White wine
Alvina Pernot · 2020
The fruit is harvested notably early to lock in high natural acidity before it can soften. The grapes are gently crushed using a traditional vertical basket press, and the wine is fermented and aged in a selection of older French oak barrels. To maintain absolute clarity, freshness, and high-tension minerality, new oak percentages are kept exceptionally low, and the wines are aged on its fine lees with minimal movement.
