Certified organic viticulture harvested entirely by hand with multiple triages. Wild native yeast fermentation with no chaptalization. Vinified and matured entirely in Burgundian oak barrels (around 20% new, 80% older barrels) for 12 months on its fine lees. No malolactic fermentation is allowed, preserving its structural precision and vibrant natural acidity.
