White wine
Kaya Tsutsui · 2018
This mesmerizing natural white wine is crafted from 25-year-old vines along southeast-facing slopes with distinct clay-limestone tuffeau soils. Hand-harvested across two separate pickings a week apart, the fruit is directly pressed before undergoing native ambient-yeast fermentation and extended aging in oak barriques for three years on the fine lees, followed by an extra year of integration in a fiberglass tank. Reflecting its Japanese name "詩旅" (Shi Ro) meaning a "poetic voyage" this completely zero-sulfur bottling unfolds with a generous, texturized mouthfeel showcasing plush aromas of ripe apple, yellow peach, honeyed orchard fruits, and lemon confit balanced by a deep, intense core of flinty mineral reduction.
