White wine
Kaya Tsutsui · 2019
This mesmerizing natural white wine is crafted from 100% Chenin Blanc grown on 26-year-old vines along southeast-facing slopes with distinct clay-limestone tuffeau soils. Hand-harvested across two separate pickings a week apart, the fruit is directly pressed before undergoing native ambient-yeast fermentation and extended aging in oak barriques for three years on the fine lees, followed by an extra year of integration in a fiberglass tank. Reflecting its Japanese name "詩旅" (Shi Ro) meaning a "poetic voyage", this completely zero-sulfur bottling is the more balanced wine of the two vintages, utilizing the natural harmony of the season to deliver a seamless, exceptionally buzzy but rounded mouthfeel showcasing plush aromas of ripe apple, yellow peach, honeyed orchard fruits, and lemon confit balanced by an impeccably integrated acidity and a deep, intense core of flinty mineral reduction.
