Red wine
Kaya Tsutsui · 2018
Sourced from a historic, 70-year-old vieilles vignes parcel planted on south-east facing slopes with a rich terroir of porous tuffeau limestone bedrock. Fermented natively with 10 days of whole-cluster carbonic maceration under CO2, followed by a week of traditional daily pigeage (punch-downs), the wine undergoes two years of undisturbed fermentation and élevage inside fiberglass tanks before being bottled completely unfined, unfiltered, and free of any added sulfur. Representing the estate's top tier red bottling, the Japanese-named “紅貴” (Ko Ki) delivers a profound, animalistic, and muscular expression of ancient-vine Cabernet Franc, opening with an intense and explosive nose of ripe blackcurrants, dark forest fruits, and savory game notes, all framed by a deeply mineral, stony mouthfeel with vast cellaring potential.
