The natural wine is a special meeting of minds between Kaya Tsutsui and neighboring Anjou winemaking legend Sébastien Fleuret. Sourced from organic vines during the notoriously cool, rain-challenged, and low-yielding 2021 vintage, the fruit was vinified with zero intervention, utilizing a gentle, partial whole-cluster infusion maceration to handle the vintage's delicate fruit. Bottled completely unfined, unfiltered, and with zero added sulfur, the cool growing season reveals a lean, bright, and intensely high-vibrational texture filled with plush aromas of tart cranberry, freshly cut red plums, wild herbal brush, and white pepper, resting on a deeply transparent, crunch-inducing schistose mineral spine.
